Sweet potato brownies
Ingredients:
- 2 medium sweet potatoes, peeled and cut into small cubes
- 12 majool dates, pitted
- 2 tablespoons of maple syrup
- 100g almond meal
- 100g oats, ground into a powder
- 2 tablespoons of coconut oil
- 6 tablespoons of cacao powder
- 2 tablespoons of nut butter
- 2 eggs, whisked with a fork
- 1 teaspoon of baking powder
- Handful of dark chocolate chips
Method:
1. Preheat oven to 180 degrees and line a large tray with baking paper
2. Boil the sweet potato for 15-20 minutes until very soft
3. Place dates, into a small saucepan and cook for 2-3 minutes in a drizzle of maple
syrup until soft
4. Once sweet potato cooked, drain and blend in a food processor
5. Place dates into the food processor with sweet potato mix, cacao, coconut oil, nut
butter. Blend until smooth
6. Transfer into the bowl
7. Stir through eggs, baking powder, almond meal and dark choc chops
8. Cook for 40-45 minutes
9. Allow to cool for 15-20 minutes before cutting into pieces
